Easy Homemade Lanzhou Beef Noodles
- Cook the beef: Cut the beef into large chunks. Blanch them in boiling water and rinse off any scum. Transfer the beef to a pressure cooker, add water, green onions, ginger, and your favorite stewing spices. Bring to a boil, then simmer on low heat until the beef is fall-apart tender.
- Make the soup base: Ladle some of the beef broth into a separate small pot. Bring it back to a boil and add sliced white radish. Season with salt and white pepper.
- Cook the noodles: Boil the noodles in a separate pot of water. Once cooked, transfer them into a serving bowl.
- Assemble: Ladle the hot beef broth and radish slices over the noodles. Top with the chopped beef, fresh cilantro, green onions, and garlic sprouts. Finish with a spoonful of chili oil, and you’re done!
