Sweet and Savory Soy Glazed Chicken Wings

Ingredients:
10 chicken wings
Yellow rock sugar (to taste)
Soy sauce (to taste)
Half a bowl of water

Wash the chicken wings and pat them dry with a paper towel.

Get the pan smoking hot before adding the wings, placing them thick-skin side down first to render the fat.

Pan-fry until both sides are golden brown.

Add a moderate amount of soy sauce, a small chunk of yellow slab sugar, and half a bowl of water. There are no fixed rules for the quantities—it all depends on your personal taste! If you prefer it sweeter, feel free to add more sugar. You can taste it halfway through and adjust as needed; if it’s too salty, just dilute it with a bit more water.

Gently pour the sauce over the wings, then let them braise on a low simmer for 5 to 10 minutes, allowing the flavors to deeply penetrate the meat.

Crank up the heat to reduce the glaze until it coats the wings perfectly, then dish it up!
