Old Cantonese Flavor – Baiyun Pig’s Trotters

Ingredients:
1 pig’s trotter
3 pieces of sand ginger
1 tablespoon of cooking wine
Soy sauce (to taste)

“Debone the pig’s trotters, roll them up, and place them in a pot with sand ginger (Kaempferia galanga), shallots (or red onion heads), and cooking wine. Simmer for 40 minutes.”

“Place sand ginger (Kaempferia galanga) and shallots (or red shallots) in a bowl. Pour hot oil over them to release their aroma, then add light soy sauce and mix well.”

“Place the cooked pig’s trotters into ice water.”

“After cooling, slice the trotters and drizzle with the prepared sauce. Ready to serve.”
