
Ingredients:
Pineapple 150g
Fried dough sticks 150g
Shrimp 200g
Rice wine 1 tsp
Cornstarch 1 tsp
White pepper 1 pinch
Salt 1 pinch
Mayonnaise 1 tbsp
Black sesame seeds 1 tsp

Halve the pineapple lengthwise. Selecting the smaller side, meticulously hollow it out, reserving the whole fruit chunks. Don’t forget to keep the scattered碎 pieces and juice! Remove the tough core from the fruit, and set the pineapple boat aside.

Flatten the shrimp with the back of your knife to break down the fibers, then mince it lightly.

Season the shrimp paste with rice wine, salt, white pepper, and cornstarch. For a touch of sweetness, stir in a teaspoon of fresh pineapple juice extracted from the碎 pieces. Blend thoroughly and allow to marinate for 10 minutes.

Slice the fried dough sticks into 3cm pieces. Carefully scoop out the center to create a pocket, and pack it tight with the seasoned shrimp mixture.

Bring your oil to 160°C and drop in the shrimp-stuffed dough. Fry for just 2-3 minutes until golden and crisp—don’t overdo it, as you want the shrimp to stay tender. For that ultimate crunch, give them a quick second fry!

Arrange the fried shrimp youtiao and pineapple chunks alternately on a plate. Drizzle with mayonnaise to your liking, sprinkle with some toasted black sesame seeds, and it’s ready to enjoy!

Alternatively, you can swap the pineapple for apple. Just pick a variety that’s crisp and sweet. The method is basically the same, and it tastes just as delicious!
