
Ingredients: 300g lettuce, 5g scallions and garlic, half a red bell pepper

Wash the lettuce and break it into pieces;

“Bring a pot of water to a rolling boil. Add one spoonful of salt and one spoonful of oil. This step is crucial for keeping the lettuce vibrant green and glossy.”

“Blanch for about 30 seconds, or until the lettuce turns a deeper, vibrant green. Immediately drain well and transfer to a serving plate.”

“Mince the shallots (or white parts of scallions) and garlic into fine bits; slice the red bell pepper into thin strips.”

“Pour sizzling hot oil over the aromatics. Then, add 2 tablespoons of seasoned soy sauce for seafood (regular light soy sauce works as a substitute), 1 tablespoon of aged vinegar, ½ teaspoon of sugar, and ½ teaspoon of chicken essence. Stir well to combine.

“Pour the prepared sauce evenly over the lettuce.”
