
Ingredients:
400g sliced lamb
2 scallions
Seasoning:
1 tsp salt
2 tbsp light soy sauce
1 tbsp dark soy sauce
1 tbsp white wine
1/2 tsp sugar
A pinch of pepper
1/2 tbsp vinegar

Cut the scallions into rolling strips. Mix all the seasonings in a bowl and set aside.

Heat the pan, add cold oil, then pour in the lamb slices and stir-fry until the meat turns white, about 2 minutes. ● Turn the heat down to low.

Add the scallions and all the prepared seasonings. Turn the heat to high and stir-fry until everything is well-coated and colored. The lamb is already cooked, so stir-fry quickly to avoid overcooking and affecting the texture, about 2 minutes. Turn off the heat and serve.
