Boiled (white-cut) beef

Boiled beef is simple to make, but very delicious.

Soak the beef shank in clean water several times to draw out the blood. (Adding a little yellow wine can help.)

Chop scallions, mince garlic, and chop cilantro and set aside.

Add an appropriate amount of water to the casserole dish, along with scallion whites and ginger slices.

Add the soaked beef, bring to a boil over high heat, and skim off the foam (after soaking in water, there will be very little foam). Simmer over low heat for 80 minutes.

After stewing, remove the beef and let it cool.

Prepare the dipping sauce: Add minced garlic, chopped scallions, cilantro, crushed peanuts, white sesame seeds, 1 tbsp light soy sauce, 1 tbsp fragrant vinegar, a pinch of sugar, and finally 2 tbsp of the beef stew broth. Mix well.

Arrange the cooled beef slices on a plate.

500g beef
4 scallions
5 slices ginger
2 sprigs cilantro
5 cloves garlic
6 peanuts
amount of white sesame seeds
1 tbsp light soy sauce
1 tbsp balsamic vinegar
amount of sugar
