Ready to make some Tomato Beef Ho Fun? First, chop your tomatoes into wedges. Give an egg a good whisk in a bowl and fry it up. Finally, slice your beef thinly and you are ready to cook!

I went with these small heads of Shanghai greens this time—they are super tender!

I started by frying the egg, then kept the oil in the pan to stir-fry the beef. Using that same flavorful oil, I sautéed the tomatoes. Once they were softened, I seasoned with a pinch of salt and poured in boiling water. After letting the tomatoes stew down until they were nice and soft, I simply tossed in the rice noodles, the fried egg, and the beef.
