
Ingredients:
2 scallions
4 eggs
Salt, chicken bouillon, light soy sauce, dark soy sauce, aged vinegar, oyster sauce, sugar, cornstarch

☞ Cut the scallions into rolling knife chunks. Beat the eggs.
☞ Sauce: 1.5 tsp salt, 1 tsp each of chicken essence and sugar, 1 tbsp each of light soy sauce, aged vinegar, and oyster sauce, 1/2 tbsp dark soy sauce, 1 tbsp starch, and 1 ladle of water.

☞ Heat a moderate amount of oil in the pan (slightly more than usual), scramble the eggs until broken into pieces, then remove and set aside.
☞ Add oil to the pan again, stir-fry the scallions until fragrant, then pour in the eggs and the prepared sauce. Stir-fry everything together over high heat until well combined, then serve.
