
Ingredients:
2 eggs
20g all-purpose flour
70g water
0.5g salt
0.5g Sichuan peppercorn oil (or thirteen-spice powder)
1 scallion
Cooking oil (as needed)

Mix 20g of flour with 70g of water until smooth.

Season with either Mala Xian powder or Chinese Thirteen Spice. Add chopped scallions and salt to taste.

Crack in two eggs and whisk until fully combined. This batch yields about three pancakes.

Heat some oil in a pan. Pour in a ladleful of batter and tilt the pan to swirl it into a thin, even layer. Keep the heat on low the entire time.

Cook until one side is firm and set, then flip over.

Flip once, cook for another moment, and it’s ready to serve.
